For several years now I've been cooking Holiday meals for a small (3-4 people) family gathering. I don't do the traditional turkey, ham, potatoes, and all that jazz. I do like to play with new ideas and bring a little bit of a health conscious meal to the table. The past few years I've made Cornish game hens for either Thanksgiving or Christmas but this year I wanted to try duck and I wanted to use my crockpot. I do my do diligence in research on my recipes. Don't think for one moment I make these up. After trying a new recipe once I'll do my own thing but I need one round under the belt first.

I had a third recipe in mind, a roasted vegetables salad, but a last minute cancellation left me cooking for just two. So instead of the extra work we just enjoyed the vegetables that went into the crock pot with the duck!

Now with only 2 people I had plenty of leftover duck. What do make with that?! Back to recipe search and I decided to make Duck Confit Quesadillas! Since we ate the legs the day before I picked the body clean and used that meat. It filled 6 tortillas with my leftovers and they didn't last the day.

*All ingredients are fresh and organic. The duck was a Mary's Free Range organic I picked up from Whole Foods along with most of the ingredients.
